Ingredients
  1. 600g Potatoes
  2. 600g Cauliflower
  3. 120g Dill Gurkins
  4. 2 Red Onions
  5. 40g Capers
  6. 1 Clove Garlic
  7. 2 Tbsp Chili Oil
  8. 80ml Coconut Cream
  9. 4 Tbsp Olive Oil
  10. 3 Tbsp Veganaise
  11. 1 Tbsp Apple Cider Vinegar
  12. 8g Lemon Zests
  13. Ground Black Pepper
  14. Himalayan Salt
Instructions
  1. Wash the potatoes and cut in chunks
  2. Flavor the potato chunks with chili oil and roast in the oven at 180 degrees celcius for 60 minutes until crispy cross
  3. Clean the cauliflower and cut into roses
  4. Steam the cauliflower roses until soft
  5. Slice and dice the red onions, garlic and gurkins and add them to a bowl
  6. Add the capers, lemon zests, veganaise, vinegar, coconut cream and olive oil to the bowl as well and mix it all together to get a nice dressing
  7. Dress the steamed cauliflower roses on a plate sided by the crispy cross roasted potatoes
  8. Add some dressing generously over the steamed cauliflower and flavor with black pepper and salt according to taste and serve right away
