Ingredients
  1. 500g Of Floury Potatoes
  2. 250g Wheat Flour
  3. 1/2 Tsp Salt
  4. 1/2 Tsp Black Pepper
  5. 1/4 Tsp Nutmeg
  6. 1 Tbsp Nutritional Yeast
  7. 250g Canned Crushed Tomatoes
  8. 250g Eggplant
  9. 150g Green Olives
  10. 1 Tbsp Chili Oil
  11. 1 Red Onion
  12. 2 Tbsp Olive Oil
  13. 2 Cloves Of Garlic
  14. 1 Tbsp Dried Oregano
  15. 1 Tbsp Spanish Paprika
  16. 1 Tsp Black Pepper
  17. 1 Tsp Salt
Instructions
  1. Cook the potatoes with the skin in salted water until soft.
  2. Then drain the potatoes from the water, allow to cool a little and peel off the skin
  3. Now press the warm potatoes through a potato press
  4. Add salt, pepper, nutmeg, nutritional yeast and the wheat flour to the mashed potatoes and knead well until a smooth dough is formed.
  5. If it is too mushy, add more wheat flour
  6. Form the potato dough into a long roll on a floured work surface and cut into 2 cm pieces
  7. Then cook the gnocchi in a large pot of boiling water for 1-2 minutes until they float up, then take the gnocchi out of the water and briefly rinse off with cold water.
  8. Now keep them warm in the oven
  9. Steam the eggplant until soft and scrape out the eggplant meat
  10. Add the olive oil into a large pan and sautee the sliced and diced onions as well as the darlic
  11. Add the crushed tomatoes, the green olives as well as the eggplant meat
  12. Slowly heat up the sauce and flavor with chili oil, oregano, paprika, pepper and salt
  13. Now let it heat briefly until everything is warm
  14. Dress a plate with warm gnocchi and top with a ladle of the spicy tomato eggplant sauce
  15. Now you are ready to enjoy - bon appetit
