Ingredients:

For the patties:

500 g Aubergine
200 ml Vegetable Stock
100 g Couscous
150 g Dried Red Lentils
40 g Wholemeal Flour
0.5 Fret Parsley
1 Clove Of Garlic
0.5 Chilli
2 Tbs Olive Oil
0,5 Ts Cumin
0,5 Ts Smoked Paprika Powder
Salt At Will
Pepper From The Mill, At Will

For the burger sauce:

5 Tbs Veganaise Mayonnaise
1 Pickle
1 Shallot
1 Ts Pickles Water
1 Ts White Sugar
Salt At Will
Cayenne Pepper At Will

Also:

¼ Iceberg Lettuce
1 Red Pointed Paprika
1 Red Onion
2 Tbs Rapeseed Oil
4 Burger Bun

Instructions:

For the patties:

Pierce aubergine with a fork and bake in the oven at 200 ° C for about 40 minutes.

Boil the vegetable stock and stir in the couscous. Remove this from the heat and loosen it with the fork. Cook the lentils gently in slightly salted water.

Finely chop garlic. Roughly chop parsley. Remove the seeds of the chili pepper and chop the chili. Halve the eggplant and scrap the flesh.

Finely puree the lentils, eggplant, cumin, parsley, garlic, paprika and chilli with a hand blender. Put the couscous in a bowl and fold in the vegetable paste. Depending on the moisture of the mass, add the wholemeal flour. Season with salt and pepper. Let the mass draw for about 10 minutes.

Make patties with wet hands and grill them on a lightly oiled grill plate on both sides for about 4 minutes.

For the burger sauce:

Chop the gherkin and shallot very finely. Mix both with the mayonnaise. Season with cucumber water, sugar, salt and cayenne pepper.

Cut iceberg lettuce into thin strips. Sliced ​​paprika and onion into thin rings.

Finally:

Halve burger rolls and toast with the cut surface on the grill.

Put the salad on the lower halves. Place the patties on top, cover with chopped peppers and onions and pour 1 tbs sauce on it. Place the upper buns as a lid on top.
