Artichokes With Wasabi Mayonnaise By Michel Nilles


The artichokes with wasabi mayonnaise as a special, East Asian-colored delicacy for the next joint barbecue with friends. So you all delight with a fancy dish, without any animal products.

For the artichokes

4 artichokes
4 tablespoons olive oil
3 tablespoons lemon juice

For the mayonnaise

80g soy yoghurt
1 teaspoon wasabi paste
1 pinch of salt
1 teaspoon lemon juice
150 ml rapeseed oil


4 lemon halves
aluminum foil


Remove external leaves of artichokes. Halve the artichokes and remove the hay. Shorten the tops of the artichoke leaves a bit. Sprinkle artichokes with lemon juice and olive oil, lightly salt and beat in aluminum foil.

Put the packets on the edge of the ember and cook for about 25-30 minutes. Then remove the artichokes from the foil and grill with the cut surface down on the grill until a nice grill pattern is created.

For the mayonnaise, stir soy yoghurt with wasabi paste, salt and lemon juice until smooth. Blend rapeseed oil with a hand blender.

Serve the artichokes with the wasabi mayonnaise and half a lemon each. This fits perfectly with a piece of toasted bread.
